I was sick this week, as I may have mentioned.
Which gets me painstakingly restless by the third day, and I must do something productive or I’m gonna bite someone.
So I decided to cook my husband dinner, since the day before my version of dinner was a printed recipe waiting on the stovetop with all the ingredients laid out and and note that said “Your Dinner. Enjoy-“
That being decided, in my never-gets-old morning routine over coffee of perusing the Epicurious and Bon Appetit websites I came across Flatbread with Shrimp and White Bean Hummus. Appealing not only because it’s puuurdy and would be relatively light on the stomach, but I already had everything in the house- Boo. Yah.
And here’s the crazy thing. I can’t remember the last time I’ve followed a recipe verbatim, or was actually pleased with the outcome after doing so, but this shit was crazy good!
Which is why I’m writing this particular out-of-character post. I didn’t make this up, didn’t modify it, didn’t F* it up, for once nothing ridiculously crazy happened in my kitchen, and well… it was just pretty damn tasty.
Unless you do the “do-aheads” this is not a weeknight meal, but definitely a nice weekend one. And would be great for company too, or well hell, just go do it-
