School

I started school yesterday.  Quite a few people have asked me what it’s like-

Imagine a place where you’re surrounded by people who are massively obsessed with the same things that you live and breathe, and dork out on every day.

Then imagine it’s real.  And because of that, I quite ironically feel like I’m in a dream.

Where else do you hear “tomorrow you’re going to need X and Y knife cause we’ll be setting up our stations and working on certain cuts,” or spend the first 15 minutes of class talking about shit you’ve cooked and crazy things you’ve tasted.

The most poignant phrase that stood out to me today was from our instructor, Chef Becker, speaking about what he wanted to teach us.  Not about recipes, but technique.  To look at ingredients and know what will work, and execute on that foundation rather than following written instructions.  To create based on what you have available and your knowledge of how to prepare each item.

Basically, to teach a man to fish.

I spend every minute in that building grinning like a dumb idiot.

So what’s it like?

Biting into the the most perfectest, crunchiest, tastiest egg roll and finding out it’s filled with rainbows and sunshine.
