New and Improved Quack Quack

Today we broke down ducks!!!!

Holy God the whole day was like shoveling ice-cream into your mouth and losing weight.

And I’m finding, delightfully, that I may have a knack for the cleaning of flesh from bone.

Did you know that all birds that fly have only dark meat?  Not this girl.  But it totally makes sense, they get so much exercise the blood is constantly slamming throughout their little bodies, and their wings exercise their plump breast muscles.

You were thinking dirty thoughts weren’t you.

It’s ok, our instructor likened the smoking process to a bong today.

Now you’re thinking high dirty thoughts.  You’re not alone, duck does that to me too 😀

This is my friend taking the leg and thigh off the duck.  We’d already removed the breasts at this point-  I think it’s f-ing brilliant I got the chance to capture this today.

Carving down in an attempt to find the hip bone.  You have to carve right through were the joint bends to hit the cartilage, thus allowing your knife to pass easily through instead of fighting with bone.

Lifting it up allows gravity to work with you, and remove the leg and thigh much easier.

It looks wicked too.

And poof!  Carcass=bantha fodder.

You got OWNED duckie.

Owned.

  2. So, I’m sitting in a hole-in-the-wall Mexican restaurant in San Jose having what’s turned out to be the best Chili Relleno in my life re-reading your posts – and they’re just so much fun.

I love the passion, focus and, especially, sense of humor.

Once you get your “toque”, they will provide a wonderful record of your experiences at culinary school. Bravo! Brava ! BRAVISIMO!
